Award Winning Chili Recipe

This award-winning chili recipe will help you crush the competition. The next office potluck is going to have a new champion crowned!

Ingredients

Chili Base

  • 1/2 Large Yellow Onion Diced
  • 1/2 Large Poblano De-seeded and Diced
  • 1 Jalapeno De-Seeded and Diced
  • 1 De-hydrated Guajillo Chili De-Seeded and re-hydrated in a small bowl of warm water.
  • 1/3 cup Chili Powder
  • 2 TBS Ground Cumin
  • 2 TBS Kosher Salt
  • 1 TBS Oregano
  • 1 TBS Garlic Powder

Chili Body

  • 1 pound Ground Chuck
  • 1/2 pound Mexican Chorizo
  • 1/2 pound Chopped Sirloin
  • 1/2 Large Yellow Onion Diced
  • 1/2 Large Poblano De-seeded and Diced
  • 1/2 cup Beef Stock
  • 1/2 cup Chicken Stock
  • 28 oz Can of Diced Fire Roasted Tomatoes
  • 16 oz Can of Kidney Beans Calm down Texans, this is optional.
  • 2 TBS Tomato Paste
  • 1 TBS Minced Garlic
  • 1 TBS Hot Sauce I like Crystals.

Instructions

  1. Combine all the Chili Base ingredients into a food processor or blender and pulse until smooth.

  2. Set Instapot to sautee and add in chorizo and ground chuck until browned. A potato masher works well to break up the ground meat.  If you don't have an Instapot a Dutch Oven will work as well.

  3. Removed meat and set aside

  4. Add in chopped sirloin and saute until browned

  5. Removed meat and set aside

  6. Add in remaining onion and poblano and saute until lightly browned.

  7. Add in minced garlic, tomato paste, fire-roasted tomatoes, chicken and beef stock.

  8. Add Chili Base we created earlier.

  9. Splash in the hot sauce.

  10. Add in kidney beans if you're not from Texas.

  11. Stir the pot.

  12. Attach lid and pressure cook on high for 5 minutes.

  13. Ladle out chili into a bowl and finish with your favorite toppings.

  14. Collect that Plastic Trophy from your co-workers and bask in your accomplishment.
