  • 2 pounds Sausage Italian or Breakfast will work
  • 2 quarts Chicken Stock Homemade or high-quality stock makes a huge difference in the final product.
  • 1 Large Yellow Onion
  • 4 Russet or Yukon Potatoes large dice
  • 4 oz Bacon
  • 1/2 cup Heavy Cream
  • 3 Large handfuls of chopped kale Add as much kale as you prefer.
  • 1 TBS Minced Garlic
  • 1 tsp Crushed Red Pepper
  • 1 tsp Italian Seasoning
  • 1 tsp Kosher Salt
  • 1/2 tsp Ground Black Pepper


  1. Turn Instant Pot to sauté mode and add bacon

  2. Brown bacon and add onions

  3. Sauté onions until they are translucent

  4. Add in garlic and give everything a stir

  5. Add sausage and start to brown.

  6. Add crushed red pepper, Italian seasoning, salt, and black pepper.

  7. Pour in chicken stock and add potatoes.

  8. Close the lid and switch the instant pot from sauté to pressure cook.

  9. Pressure cook for 5 minutes. Be careful when releasing the steam.

  10. Add heavy cream and kale.

  11. Stir kale until it starts to wilt and softens just a bit.

  12. Grab a bowl and a piece of crusty bread and enjoy.
