Hot Bowl of award winning chili.

BeefThis Award-Winning Instapot Chili recipe is the perfect bowl of hearty goodness to dig into on a cold winter day. It’s sure to warm your belly and your soul. It’s also the perfect recipe to wipe that smug look off Ken from accountings face at the next office chili cookoff. Whether you want to impress the family or the respect of your co-workers, this award-winning chili recipe will get the job done.

Office Warfare

Ok, maybe it’s not quite that serious but winning the annual office chili cookoff is lots of fun. In what seems like another life at this point, I worked in a cube farm for many years in the corporate office of a very large grocery chain.

You know the setting, little to no windows, basking in the soft blue glow of your computer screen and flickering fluorescent lights. The constant hum of the copy machine and clattering of keys furiously pecking out the cover letter for their TPS reports is enough to drive you mad. In that melancholy environment, anything to break the monotony of the day was a welcome relief. Pot lucks and chili cookoffs were a welcome distraction and something my office took pretty seriously. There were some pretty good cooks in my office. I had to step my game up to compete. The recipe below is what I concocted to crush the competition.

Steaming bowl of delicious chili

Instant pot = Easy Button

I originally made this recipe in a cast iron dutch oven. However,  I’ve recently switched over to an Instapot. It’s easy to brown all your meat, sautee your veggies, and then put the lid on and pressure-cook everything to speed the cook-time up. The only other kitchen gadget I use is a food processor to make the chili base. You can use a blender if you don’t have a food processor.

Go Forth and Conquer

The video below is a step by step guide on how to assemble your Award-Winning Instapot Chili. As always, if you make this recipe be sure and drop a comment below or hit me up on social media @ilovemeatdotcom. I wanna see the pic of everyone’s plastic trophy! Good Luck, and may the potluck odds be ever in your favor.

  • 1/2 Large Yellow Onion Diced
  • 1/2 Large Poblano De-seeded and Diced

  10. Add in kidney beans if you're not from Texas.

  11. Stir the pot.
